The provision of raw materials is the most important aspect throughout the production cycle of the Nuovo Molino di Assisi. All raw materials must meet the highest quality standards, therefore thanks to vast cereal storage possibilities, we prefer to gather all the local production and manage the drying and preservation processes directly.
All raw materials are sampled when unloaded and analysed for moisture and impurities; subsequently they are are stored in special warehouses prior screening and removal of small stones.
These are then stored in special reinforced concrete warehouses maintaining their physical/chemical properties by using cold air that is blown through underground nozzles distributed by coolers.
All raw materials must be GMO-free so that they can be traced and tracked at any time in order to provide further guarantees not only for farmers but also for the consumers.

Inside the main plant of Bastia Umbra, there are 6 unloading holes and 3 screening systems for cereal sieving.
